I wanted to be able to still have a cookie that wouldnât sky rocket our sugar intake! So meet đđť
The Healthier Date Cookies
Makes 12
1/2 cup creamy almond or peanut butter
1/3 cup coconut oil, melted
4 tablespoons maple syrup
1 chia seed egg (see below) or normal egg
2 teaspoons vanilla extract
1 3/4 cup almond meal
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups dates
Bang everything into a bowl and mix well. Evenly spoon out on to a lined tray to make 12 cookies . Bake at 180 degrees for 10 minutes. Cool before eating if you can wait that long đ
My favourite way to do egg free is using chia seeds. Itâs super easy 1 Tbsp chia seeds + 2.5 Tbsp water. Mix together and let it sit for 5 minutes until itâs thickened up đ works as a great substitute in most baking.
Mix them up with some #organic orange zest and squeeze of juice or substitute the dates with nuts or chocolate chips or even both đ
