These easy muesli bar bites are not only nourishing, but avoid any nasty additives found in common store bought bars.
These immune boosting, heart healthy and antioxidant powerhouses are must haves for the lunch box!
❄️They can easily be frozen and pulled out when needed. If they last that long that is!
Muesli bar bites
Makes about 20 balls
2 cups of dates
3/4 cup rolled oats or almond meal
1 cup desiccated coconut
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/4 cup sesame seeds
1/4 cup whole chia seeds
2 Tbsp coconut oil
3 Tbsp nut butter (I used @chantal_organics )
2 Tbsp maple syrup
Pinch of salt
Dark chocolate for drizzling (we love @bennettonaturalfoods)
Soak the dates overnight or if you are anything like me soaking them in hot water for 5 minutes works too 😆
Then literally throw everything in a food processor and blitz until the mixture comes together and is nice and sticky. If it happens to be too dry add some extra coconut oil or water.
Roll into balls and set aside. Melt chocolate and drizzle on top (totally unnecessary, but necessary).
